I have a list of discussion entries that are shown on my page, but after the entries the is the link "Read More" which links to the Forum.

Is there a way that this can be removed completely from the view, or at least only visible once the number of Limit Posts is reached.

The point about the Kunena Discuss plugin is to lead your users into the forum. That's how the free Kunena Discuss plugin was designed. If you would rather use a different Joomla article commenting solution (one that does not lead your users to your forum or that integrates Joomla articles with Kunena in the way that the Kunena Discuss plugin does) then you can use something else. There are plenty of other Joomla article commenting solutions available.

There is no "remove read more link" option in Kunena Discuss plugin settings.

However, the good news is that you can hide this element using CSS. Firebug will show you what you need to do. Add your custom CSS changes to your Joomla site template CSS file. See How do I change the colours of my template in Kunena? for more information.
