I searched for "sampleData" in the DB and could not find anything. Which table is this sampleData in?
When I try and create a new category, I still get this info:

Unfortunately, I deleted all the original categories in the process. I still have the j3 site with all the cats. Is there a method to export/import the categories?

1. is your Joomla 4.1 a test page?
2. is your Joomla 3.10 page still running with Kunena 5.2 or at least do you have a backup of it?
3. do you have an additional backup only of the Kunena tables from the K5.2 installation?
4. do you still have access to the media/kunena folder from the K5.2 installation?

1. to be sure, create a backup first.
2. Go in the backend to Kunena -> Tools and uninstall Kunena. Hint: This step removes Kunena complete along with the database tables.
3. Import the Kunena tables from your K.5
4. install the currentest version of Kunena 6.0 RC1 (it starts the Kunena migration).
5. Create again the Kunena menu
6. If everything works, copy the folders avatars and attachments from /media/kunena into the new installation
